My cutting / charcuterie board are made from some exotics. One thing to remember the charcuterie  side is only meant for serving or display. DO NOT cut on the charcuterie side. The other side is for the cutting. It is finished with a safe oil and possible wax coating that is food safe. Both sides are food safe but only one is for actually cutting. Another thing to remember is to clean the cutting board, and every 6 months or so give it a coat of Mineral Oil. Rub it in good, let it set a half hour and wipe of the excess. This will keep your cutting board like new for many years.
